found out in this case, comparing with other
technologies, that to maximize the number
of metabolites analysed, the complete
separation is more important than the high
resolution MS. With the help of a new EU
grant we have recently installed an LC High
Resolution MS but with LC/LC the separation
is not possible to the extent necessary
for a laboratory routinely analysing hundreds
of samples within each experiment.
What was the practical benefit for the
wine manufactures in the two areas?
Traceability.Sparkling wine is one of the
most complex food items due to the complicated
procedure of manufacture. Only
using GCxGC-Tof technology it was possible
to scientifically demonstrate the close link
of the volatiles present in Trentodoc to the
„terroir“. For example we were also examining
Traminer, Gewürztraminer, Müller-Thurgau,
Chardonnay and Pinot Gris. The complete
net separation of all compounds made
it possible to differentialte the wines clearly.
Another recent example for the Italian
red wines: we have just published
and made publicly available a database
describing the metabolome of eleven red
wines, produced via HPLC-HRMS.
Do you apply GC/GC also on other
foods or mainly on wine?
Mainly on wine and other fermented bevarages.

Does that become a trend?
It is certainly an option but it is difficult
for publicly owned labs because they
have to follow certain administrative procedures
while private labs enjoy more
freedom. As a private Lab you can choose
what you want with large flexibility. Official
labs are bound by strict administrative
regulations, limiting this opportunity.
